Cucumber Salad

This is the perfect summer cookout side dish. With a twist of sweet and tangy.
Ingredients
- 3-4 Large Cucumbers
- 6-7 Cherry tomatoes
- 1 Small red onion
- ½ Cup Olive Oil Mayo
- 1 TBS of Ranch dressing
- ½ Cup of Stevia or Sugar
- ½ Cup Apple Cider Vinegar
- 2 TBS lemon juice
- 6 Slices of cooked bacon (crumbled) or 2.5oz bag of real bacon bits
- ½ tsp Salt
- 1 tsp ground black pepper
Directions
- Slice cucumbers, then cut the slices in half.
- Cut tomatoes into quarters.
- Dice onion.
- Put cucumbers, onions, and tomatoes into a medium mixing bowl.
- Add the rest of the ingredients into a small bowl and mix well.
- Pour the wet mix onto the cucumber, tomatoes, and onions.
- Stir well.
- Put the salad into the frig for about 2-3 hours, stirring occassionally.
