Iced Cinnamon Swirl Banana Bread

Have overly-ripe bananas that you are thinking about throwing away? DON'T DO IT...use the bananas in this amazingly delicious recipe! I guarantee your family will thank you 🙂

Ingredients

  • FOR BREAD
  • 2 cups all-purpose flour
  • 3/4 Teaspoon baking soda
  • 1 Teaspoon ground cinnamon
  • 1/2 Cup unpacked light brown sugar
  • 4 Tablespoons salted butter, softened at room temperature
  • 2 Large eggs at room temperature
  • 1 Teaspoon vanilla extract
  • 1 1/2 Cups of very ripe bananas (about 4 bananas)
  • 1/3 Cup sour cream OR yogurt (plain or vanilla yogurt)
  • 1/4 Cup of chopped walnuts (OPTIONAL)
  • CINNAMON SWIRL
  • 1/4 Cup granulated sugar
  • 1 Teaspoon ground cinnamon
  • ICING
  • 1/2 Cup powdered sugar
  • 1 1/4 Tablespoon of milk (heavy cream, half and half or something similar)

Directions

  1. Preheat the oven to 350F.
  2. Spray a 9×5-inch loaf pan with cooking spray, lightly covering with flour, and set aside.
  3. In a medium bowl, whisk together the flour, baking soda, cinnamon & walnuts (OPTIONAL) & set aside.
  4. In a separate large bowl, beat the brown sugar and butter with a mixer on medium speed until it is well blended (about1-1 1/2 minutes).
  5. Add one egg at a time to the butter/sugar mixture, beating well after each egg.
  6. Stir the mashed bananas, sour cream or yogurt, and vanilla into the butter/sugar mixture.
  7. Slowly add in the flour (dry) ingredients. The batter will be thick, but BE CAREFUL NOT TO over-mix the batter.
  8. Spread half of the batter into the prepared loaf pan and then sprinkle the batter with the cinnamon swirl ingredients (cinnamon & granulated sugar).
  9. Top it with the remaining batter.
  10. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  11. Cool for about 15 minutes in the pan, on a plate, or on a wire rack.
  12. While waiting for the bread to cool, make the icing by combining the powdered sugar and milk. *TIP: You may keep adding more powdered sugar until you have reached the desired thickness.
  13. Drizzle the icing over the WARM banana bread before slicing the loaf.

Notes

You may add butter to the slices, but most people find it is not necessary, for this bread is very delicious just the way it is!*This banana bread can stay fresh & moist when kept at room temperature in a Ziploc bag or an airtight container for up to 9-10 days.
