Ingredients
- FOR BREAD
- 2 cups all-purpose flour
- 3/4 Teaspoon baking soda
- 1 Teaspoon ground cinnamon
- 1/2 Cup unpacked light brown sugar
- 4 Tablespoons salted butter, softened at room temperature
- 2 Large eggs at room temperature
- 1 Teaspoon vanilla extract
- 1 1/2 Cups of very ripe bananas (about 4 bananas)
- 1/3 Cup sour cream OR yogurt (plain or vanilla yogurt)
- 1/4 Cup of chopped walnuts (OPTIONAL)
- CINNAMON SWIRL
- 1/4 Cup granulated sugar
- 1 Teaspoon ground cinnamon
- ICING
- 1/2 Cup powdered sugar
- 1 1/4 Tablespoon of milk (heavy cream, half and half or something similar)
Directions
- Preheat the oven to 350F.
- Spray a 9×5-inch loaf pan with cooking spray, lightly covering with flour, and set aside.
- In a medium bowl, whisk together the flour, baking soda, cinnamon & walnuts (OPTIONAL) & set aside.
- In a separate large bowl, beat the brown sugar and butter with a mixer on medium speed until it is well blended (about1-1 1/2 minutes).
- Add one egg at a time to the butter/sugar mixture, beating well after each egg.
- Stir the mashed bananas, sour cream or yogurt, and vanilla into the butter/sugar mixture.
- Slowly add in the flour (dry) ingredients. The batter will be thick, but BE CAREFUL NOT TO over-mix the batter.
- Spread half of the batter into the prepared loaf pan and then sprinkle the batter with the cinnamon swirl ingredients (cinnamon & granulated sugar).
- Top it with the remaining batter.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Cool for about 15 minutes in the pan, on a plate, or on a wire rack.
- While waiting for the bread to cool, make the icing by combining the powdered sugar and milk. *TIP: You may keep adding more powdered sugar until you have reached the desired thickness.
- Drizzle the icing over the WARM banana bread before slicing the loaf.
- VOILA...ENJOY this purely yummy bread 🙂
