My family loves peanut butter and are not huge fans of pork, so this was an amazing recipe to use with pork. This is one of the MOST delicious dinners I have made! My family absolutely loved it and walked away waddling..lol 😉 It has the sweet & tangyness of soy and the rich, creamy taste of peanut butter! You will love this recipe...ENJOY 🙂
Ingredients
- 8-9 Pieces of Pork or Chicken (cut into ¼" strips)
- 8 TBS of Soy Sauce
- 4½ tsp of Stevia (or Sugar)
- 4 Chopped Garlic Cloves
- 1 1/3 tsp Ground Ginger
- ¼ Cup of Honey
- 1/3 Cup of Peanut Butter
- 2½ Cups of Evaporated Milk
- 1½ Cups of chopped Green Onions
- 3 Cups of seeded and chopped Cucumbers
Directions
- Mix the soy sauce, stevia, garlic, and ginger.
- Pour over pork or chicken in a casserole dish.
- Refrigerate for 25-30 minutes.
- Lightly coat the bottom of a skillet with Olive Oil, and place over medium heat until hot.
- Brown/Cook the pork or chicken (about 15 minutes) (Make sure to cook the meat thoroughly through).
- Mix the milk, peanut butter and honey, and add it to the skillet.
- Heat and stir until it starts to thicken.
- Turn heat to low.
- Stir in the green onions and cucumbers and serve ASAP.
Notes
I make up about 8 servings of rice. Then mix in 3 TBS of soy sauce, and ½ Cup of green onions and use it for the bed of the peanut sauce and meat.
