Cucumber Salad

This is the perfect summer cookout side dish. With a twist of sweet and tangy.

Ingredients

  • 3-4 Large Cucumbers
  • 6-7 Cherry tomatoes
  • 1 Small red onion
  • ½ Cup Olive Oil Mayo
  • 1 TBS of Ranch dressing
  • ½ Cup of Stevia or Sugar
  • ½ Cup Apple Cider Vinegar
  • 2 TBS lemon juice
  • 6 Slices of cooked bacon (crumbled) or 2.5oz bag of real bacon bits
  • ½ tsp Salt
  • 1 tsp ground black pepper

Directions

  1. Slice cucumbers, then cut the slices in half.
  2. Cut tomatoes into quarters.
  3. Dice onion.
  4. Put cucumbers, onions, and tomatoes into a medium mixing bowl.
  5. Add the rest of the ingredients into a small bowl and mix well.
  6. Pour the wet mix onto the cucumber, tomatoes, and onions.
  7. Stir well.
  8. Put the salad into the frig for about 2-3 hours, stirring occassionally.
