Mouth-Watering Meatloaf

Growing up, I disliked the meatloaf that most people made that was slathered in ketchup or tomato sauce (I am not a big fan of ketchup). When I moved out on my own, my dislike for meatloaf made me experiment with my own different versions...but this one is, by far, my favorite! My husband, sons, friends & family rave about my meatloaf. It's easy & very delicious! ENJOY 🙂

Ingredients

  • 2.5-3lbs-Ground Beef (or Ground Turkey)
  • 1/4 cup-Shredded Cheddar Cheese
  • 15oz can-Cream of Mushroom Soup
  • 1 1/2 1 oz packages-Onion Soup Mix
  • 2 eggs
  • 1/2 cup-Bread Crumbs (unflavored)
  • 1/3 cup-Milk
  • 1/4 TBS garlic salt
  • 1 TBS-Parsley

Directions

  1. Pre-heat oven at 380 degrees.
  2. Take thawed ground meat and place in baking dish.
  3. Add the egg, onion soup mix, garlic salt, and bread crumbs (or rolled oats) & mix well.
  4. Add cheddar and mix well again.
  5. Mold Meat into a loaf.
  6. In separate mixing bowl, mix milk & cream of mushroom soup.
  7. Pour the cream of mushroom soup over the meat loaf.
  8. Sprinkle parsley over the top.
  9. Cook for about 55 minutes, or until the meatloaf is crispy around the edges.

Notes

After cooking the meat loaf for about 45 minutes, cut the meatloaf in half to help cook it through. For a LOW CARB version, add crushed pork skins instead of the bread crumbs, saltines or rolled oats 🙂
